# How-to Steps:

01 - Organize all filling ingredients and fill a large shallow bowl with warm water for softening rice paper.
02 - Submerge one rice paper sheet in warm water for 5-10 seconds until pliable. Transfer to a clean, damp kitchen towel or cutting board.
03 - Spread approximately 1 teaspoon of pizza sauce in the center of the softened rice paper sheet.
04 - Arrange mozzarella, olives, bell pepper, mushrooms, and onion over the sauce. Season with oregano and red pepper flakes.
05 - Fold both sides inward toward the center, then roll tightly from the bottom to completely enclose the filling, similar to a burrito.
06 - Repeat the process with remaining rice paper sheets and filling ingredients until all rolls are prepared.
07 - Heat olive oil in a large nonstick skillet over medium heat. Place rolls seam-side down and cook 2-3 minutes per side until golden brown and crispy. Cook in batches if needed.
08 - Remove from pan and allow to cool briefly. Accompany with additional pizza sauce for dipping.

# Expert Advice:

01 -
  • The rice paper gets impossibly crispy while staying chewy inside, creating this texture combination that makes you wonder why we ever bothered with regular pizza dough
  • You can customize the fillings endlessly based on whats in your fridge, making them perfect for using up random vegetables or that half jar of olives
02 -
  • Dont overfill the rolls or theyll burst while rolling or tear during cooking—use less filling than you think you need
  • Work quickly once the rice paper is softened, as it gets stickier and more fragile the longer it sits
03 -
  • Keep a damp paper towel over finished rolls while you work to prevent them from drying out
  • If rice paper tears during rolling, layer another small piece over the tear to patch it
